Marc's Chocolate Combustion Lite


So Marc's Chocolate Combustion was such a cool recipe that I had to play with it. I turned Marc's recipe into a kind of chocolate mousse (see entry below for original recipe) but instead of butter, I used whipped cream. Well I just lied, I did use some butter - I melted about 4 tablespoons butter and added this to the cocoa and sugar to moisten it then added the eggs. But that is much less than the 2 sticks Marc used. Then I folded 1 cup cream that I had whipped. And instead of biscuits I had a Eureka! moment and added my own homemade incomparable GRANOLA (check it out, those of you who have my new book Wild Flavors)! And then I added a splash of cognac, some dried cherries and chocoalte chips. This was for a dinner party of mine where no one was allowed to speak English. The woman with the dark rimmed glasses, is French and was my roommate for a brief period of time. We all knew French. But that lasted for about 30 minutes and then we defaulted to English because of a few of us couldn't keep up. Do try this mousse - it is right up there with my favorite desserts - Floating Island and Lemon Coconut Cake. But it is much easier. By the way, I kept the mousse in the freezer for a couple of hours before dessert. And now, the leftovers have been in my freezer for a week and I steal a bite whenever I can.
